Spinach Spandango

1 1/2 pounds ground turkey
1/2 cup sour cream (I use plain yogurt or plain Greek yogurt)
1 cup jack cheese
2 packages frozen spinach (thaw and remove excess water)
1 cup rice (yields 2 cups cooked rice)
1 can Cream of Celery Soup
Mushrooms (optional)
Onion (optional)
Garlic salt, salt and pepper to taste

Cook rice and set aside. Brown ground turkey with onions, mushrooms, and seasonings and place in square casserole dish. Spread spinach on top of meat. In a medium size bowl combine the sour cream, soup and rice and pour over meat and spinach. Top with grated cheese and bake at 350 degrees for 45 minutes.
